Well it’s really only lasagna in the sense that it is layered like the lasagna. I made a version of this method for a pot-luck at my day job. The girls liked it so much they wanted the recipe. It is not really a recipe as such but more of a method. Today I am using my favorite Chili Verde Con Cerdo. Cerdo is pork I think.
The version I made for the pot-luck was a more traditional Burrito lasagna with seasoned ground beef and a red burrito sauce. (They also wanted the recipe for the red burrito sauce, I will be posting that later in the week) Otherwise the method is the same.

Once you have the Chili Verde Con Cerdo ready to go, or seasoned ground beef and red burrito sauce, you will need:
13×9 pan
flour tortillas
1 1/2 lbs Grated Colby Jack Cheese
3 Medium Diced Tomatoes
Sour Cream
Shredded Lettuce (Optional)
Re-fried Beans (Optional)
OK Lets Get Started. Preheat your oven to 350 degrees
Step #1 Get every thing ready. As you can see this was left-over from a couple of nights earlier.
Step #2a Place a little sauce and Cheese on the bottom.
Step #2b Place some tortillas in the pan. I cut mine to size with a pizza cutter.
One other thought. I think next time I will fry the tortillas to see if the have a little better texture. This time they where a little gooey.
Step #3 Place some more sauce on the tortillas.
Step #4 Add The meat, tomatoes, sour cream and cheese
Step #5 Top with another layer of tortillas and repeat steps three through four. Top with another layer of tortillas and sauce.
Because mine are left overs from the fridge I am going to wait for the final application of cheese. If you made the sauce and meat fresh and they are still warm you won’t need to do this.
Place in the oven for about 45 minutes or until the the interior is hot or the cheese begins to turn a nice golden brown and delicious. Or you could use a quick read thermometer.
It should look like this when it comes out of the oven.
Once out of the oven let it set for 30 minutes them plate it up.
I like this stuff so much the wife got mad because of all the Mmmmm’s coming out of me.
