Quick and Easy Italian Chicken Sandwich

I was looking around for something quick and easy to make for lunch the other day. So I swung open the side-by-side fridge/freezer and stared in them for awhile. When I came back from my trance, I noticed some pre-cooked Italian Chicken breasts in the freezer. Glancing over to the fridge I spied some left-over spaghetti sauce. We had just had spaghetti the night before so I wasn’t in the mood for paste… What else could I make with Italian Chicken breasts and spaghetti sauce??? Just then I glanced on to of the fridge and saw some nice six inch sub buns.

DING, DING, DING that’s it, Italian Chicken Sandwiches!


Now to the find the rest of the sandwich fixings I would need so back into the fridge I went; Parisian cheese – check, Mozzarella cheese – check, mushrooms – check. I think I have everything I need to make an awesome Italian Chicken Sammy

Here’s the list.

4 to 6 Sub Buns
4 Pre-Cooked Chicken Breast
1qt Spaghetti Sauce (left-over or from a jar)
8 oz Bag of Shredded Mozzarella Cheese
4 to 8 Tbls Grated Parmesan Cheese
6 large Sliced Mushrooms

Makes 4 to 6 Sammys

Start off by  thawing and slicing the chicken breasts. Then pour the sauce in a large saute pan and throw in the chicken and bring the stuff up heat.


If the buns aren’t sliced, slice them in half now. Arrange them on a foil covered sheet pan. The foil helps with clean up later. Place some chicken on the buns and slather some sauce on the buns, both sides.


Sprinkle liberally with grated Parmesan cheese.


Top with a generous amounts of mozzarella cheese, lay some sliced mushrooms and top.


Place under your broiler until the cheese is nice and bubbly and just starting to turn a little brown. I think I took these out a little too soon.

Or fold it over and cut in two.


I just thought of something, if you have some pepperoni slices laying around you could put some of those on too!.
