This is probably the easiest and best tasting dish I have ever made. Sorry no peas though it just sounds neat.
I used to make this when I worked at Gutherie’s in Wyoming MI. We used to serve it on a scooped out pineapple quarter. I just went for a bed of lettuce and some sliced tomatoes and cucumbers on the side.
You will need:
Three cooked chicken breasts
1/3 cup med diced onion
1/2 cup diced celery
1/3 cup thinly sliced onion
3 to 4 Tbls Mayonnaise
1/2 tsp Season Salt (approximate)
1/2 tsp Season Pepper (approximate)
1/2 tsp Granulated Garlic (approximate)
1 tsp Chopped Parsley
Cook the chicken any way you like, I sautéed them in a pan, then cool them in the fridge. Once cool, dice them into about half inch cubes and place in a large bowl.
Add the onions, celery and enough mayo to hold it all together. Then season to taste. The seasoning in the ingredient list is approximate. I used some when I cooked the chicken and added more to the salad, so season it to taste.
Serve on a bed of lettuce and garnish with cucumber and tomato slices. The wife thru on the grapes.
