Potato Pancakes from Leftover Mashed Potatoes

Here is a great way to use up any leftover mashed potatoes that you have. These taste great and they really stick to your ribs on these cold, waning days of winter.


It’s really easy just add egg, a little flour and some finely diced onions. So lets get started.

You will need:

3 to 4 cups Mashed Potatoes
1 Egg
2 Tbls Flour
1/4 cup Finely Diced Onions
1/4 tsp Granulated Garlic
1 to 2 Tbls Oil
Salt and Pepper

Combine everything in an appropriate size bowl.


Place  about 1 to 2 Tbls oil on a hot griddle once the oil is hot,  place a heaping spoonful of the mixture on the griddle and smash down to form 3 to 4 inch pancakes about a 1/4 to 3/8 inch thick.


Once they are a nice GBAD (Golden Brown and Delicious) serve them with your favorite breakfast. I had eggs and toast.

    I knew it! I knew there was a way to make potato pancakes from leftover mashed potatoes! Now, if I could ever make a meal where the folks at my house actually leave some mashed potatoes in the pot so I can use the leftovers! ?????
