I’m not sure where she found this recipe but it is a great one. I’ll eat this stuff any time. Morning, noon ot night, this is my absolute all time favorite dish served with 3 over easy eggs and some whole wheat toast. Yummy!
OK, lets get going:
5 to 6 Potatoes Scrubbed
1/2 Med. Sweet Onion Diced
1 lb Smoked Sausage Diced Bite Size
1/3 Cup Bacon Grease
Season Salt
Season Pepper
Granulated Garlic
It’s supposed to have green peppers too, but I usually don’t bother with them.
Cook the potatoes in the microwave till done. Usually two 5 minute blasts. Let cool, then cut into bite size pieces.
Melt the bacon grease in a very large skillet, add the onions and sweat for about 5 minutes.
Put in the potatoes and sausage.
Cook over medium high heat till most is a nice golden brown. Some will get a bit more golden brown then the others. Some of the onions might get a little dark. Not to worry, its supposed to be like that.
Serve with eggs, your favorite way, and toast with butter..
