Kyle’s Flaming Hot Chicken Skewers

I through this together last Sunday using the Chicken Marinade from the Post on Feb. 9th. I cut the chicken breasts into strips and put them on 12” skewers that I cut in half. I served this with my favorite; Dad’s Greatest Steak Fries and Watermelon.

Software:

6 Boneless Skinless Chicken Breasts (approximately 4 Lbs)

12″ bamboo skewers

I started by making the Chicken Marinade. This batch of marinade was a little hotter than usual. I guess that’s how I got the name. Kyle my son called theme Flaming Hot Chicken Skewers, so the name stuck. I think it was either the 2 extra Tbls of Tabasco Chipotle sauce or the new jar jalapenos where hotter than usual.

I then cut the chicken breasts into about 3/4″ strips. I cut the 12″ skewers in half  with a large chef’s knife. Cut them at an angle so you can easily skewer the chicken. Caution! When you put them on the skewers be sure not to pack them too tight or stab your self in the hand.

Place the skewered chicken in a shallow pan, I used a 6 by 9 glass casserole dish, cover the chicken skewers with the marinade and let marinade for at least an hour. I’ve let them go as long as the next day, but just remember the longer they marinate the hotter they will be.

Now that at least an hour has passes it is time to fire up your grill. I use a gas grill because I won it from WLAV, a local radio station.

Once your grill is good and hot place the skewers on the the grates with a good inch between each one.

Cook for a couple of minutes on a side and turn them four times. So you will be cooking them about four to five minutes a side or until the internal temperature is 150 to 160 degrees. Your times will very depending on your grill and how tightly you pack the chicken on the skewer.

I had to put the skewers towards the back, or hotter part of my grill, to get them good and brown.

Once they where done I brought them in and plated them up.

They were so good Kyle ate two skewers, he usually doesn’t like hot stuff, but he wolfed these down. I’ll post Dad’s Greatest Steak Fires on Sunday, so be sure to check back.
