Potatoes and Brocolli Dished  Up

This is a great side dish. The kid’s love it and it’s an easy way to get them to eat their vegetables with hardly any arguing.

Prep time: 15 to 20 min
Cook time: 15 min
Serves 5 to 6

Hardware:
13×9″ pan
Aluminum Foil

Software:
5 Med. Potatoes scrubbed
2 to 3 stalks broccoli
1 lb grated Colby Jack cheese
4 Tbls Butter
Season Salt
Season Pepper
Granulated Garlic

Scrub the Potatoes and microwave till done. This will save a lot in the final cooking and keep the cheese from over browning.

Clean and cut up the broccoli into bite size pieces and cook them in boiling water or steam them till done. Cool in a water bath.

Let the potatoes cool enough to handle then cut them up into bite size pieces. Spray the 13×9″ pan with non-stick spray.

Place the potatoes and broccoli in the pan. Season with spices then top with cheese. Melt the butter and drizzle it over the potatoes and broccoli. I did this in two layers.

If you want you can mix them up a bit, but it is kind of difficult in the pan.

I just thought of something. If you have any cooked bacon laying around it would be great chopped up and sprinkled in too.
Cover with aluminum foil and place is 350º for 20 to 30 minute. Remove foil and continue cooking until cheese starts to turn light brown and bubbly.

Serve and enjoy.
