Speaking of Recipes, I Usually Don’t Use Them

One of the most important thing is writing a cooking blog is the recipes. When I started this blog I thought it would be easy to write down my experiances and share my recipes.

Then it dawned on me, most all of my recipes are in my head. I couldn’t remember the last time I used a measuring device in the kitchen. Except for baking cakes and such, I hardly ever touch measuring spoons or measuring cups.

The only time I use a recipe is for something I’ve never cooked before, and of course baked goods. It’s like I’m a cooking savant. I see a recipe once and I almost never look at it again. Unless it been quite sometime since I cooked it or if I can’t remember an ingredient.

So in order to do this blog I have had to relearn or recreate most all of the food I have been cooking for the past 20 or so years. It’s great fun trying to right down the recipes as I cook them. (sarcasm)

Another problem I have run in to is that a lot of my recipes are from my restaurant days and are for large quantities. Scaling them down can be a challenge. I don’t want to force scaling recipes on to you.

So I guess my point is that if the blog isn’t updated as often as you think it should be, I’m working on it. I’m cooking stuff and writing it down as I go and It’s taking a lot more time than I thought..
