If the Pan is the Thing, What’s it Made of?

Cast Iron is nice, but a lot of people find them too heavy and it is third in heat conductivity behind copper then aluminum.

Most people opt for aluminum, it is what you will find in most restaurant supply stores. It transfers heat evenly and is cost effective.

If cost is no hindrance to you, you could go for copper or copper clad cookware. According to www.cookingforengineers.com cooper has almost twice the thermal conductive of aluminum. If you really want to get technical check out the article “Common Materials of Cookware“.

The brand name of most of the stuff I purchased from the restaurant supply store is WearEver. It is aluminum. It’s been so long since I purchased the pans I don’t remember the costs.

I’m not sure where you are located, but Gordon’s Food Service has a nice selection in there retail stores and you can order pretty much any thing from their catalog through their retail stores. Here is a link to their store locations.

After doing some quick Googleing I Found InstaWares.com. They looked like they have good selection. I didn’t have time to compare prices. It’s always a good idea to shop around..
